A Stronghold of Rulers and Rebels

With the recent death toll jumping to nearly 100 and 1,000 injured, Hrushevskoho Street, one of the strongholds of EuroMaidans three-month-long protests, made headlines around the globe. It was here, on 19 January the countrys stand against government corruption, abuse of power, and the violation of human rights turned from peaceful protest to all-out revolution. Having witnessed much over the years, Hrushevskoho is a street with a history, and not only care of recent days.

When Walls Can Talk

People have been writing on walls since the dawn of civilisation, we call it graffiti, and ranges from simple written words to elaborate wall paintings. Sometimes it is merely the creator wanting to leave his or her mark; sometimes there is an underlying social or political reason. And it is due to the latter that graffiti has exploded across Kyiv in recent months. Anti dictator messages aside, we peel back a few layers of paint to look at graffiti in the city in general.

A Soupalicious Season

Its cold, its hot, its cold again the weather over these last few weeks is almost as bad as your last girlfriend. Dont take it lying down get out there and get back on your feet. Need a little help to get you going? Try one of these fall soups to warm your gullet.

 Weve picked some of our favourite soups of the season to get you into the autumn spirit. And whats more, theyre all available at venues around town.

Cream of Kyiv Chestnut
Kanapa has an interesting take on the classic autumn soup in this, their Cream of Kyiv Chestnut. Taking varieties of edible chestnut and boiling them in a sweet syrup, the nut is sliced along with a delicious piece of leek and fried until golden brown. Combine that with a vegetable or chicken broth base (at the gourmands discretion) and youve got a rich and velvety soup, served with a piece of local cheese, perfect for autumn.

Buzara
This is a soup commonly found around the Adriatic, and most often in Croatia, but has been brought to Kyiv especially for the autumn season. Seafood is the star in this dish, for which Ink uses a variety of shellfish such as mussels, clams, shrimp, scallops and crayfish. Wine, red or white, is essential for bringing out the flavours of the seafood base, to which is added broth, a variety of vegetables, herbs and spices. Thicken it up with breadcrumb and youve got a perfect meal, delicious at any time of day.

Asian Pumpkin with Scallop Tempura
Using the ingredients in abundance this season, Pache takes brilliantly orange pumpkins, and turns them into a culinary treat for the senses. Pumpkins are cut, sprinkled with sesame oil, and placed in a Josper oven to soften. Onion is then fried over a hot fire with melted butter, chili pepper and the pulp from the prepared pumpkin. Chicken broth and cream are added and left to allow the flavours to infuse. Sieve to get a deliciously creamy consistency, serve with scallop tempura and you are going to be left wanting more every time.

Cream of Cauliflower with Pear and Salmon
Hidden on a corner just up from Maidan Nezalezhnosti, youll find Tres Française, a delightful little venue serving up traditional French goodness. This season, theyve got a couple of warm-you-up soups on offer, including their Cream of Cauliflower with Pear and Salmon. As a new take on an old favourite, the silky cauliflower creates a perfect palette for the stars of the show the pear and salmon.

Beef Tail Consommé
According to Antwerpen, Beef Tail Consommé is the perfect choice for this cool autumn weather, and theirs couldnt be better. After boiling the beef tail with vegetables and egg white, the next stage of preparation takes four or five hours, but its worth it as the result is an incredible colour, taste and aroma.

Ukha
Fish Market has the upper hand on good seafood in Kyiv, which is why this traditional Eastern European fish favourite is especially good here. Whats more, you get to choose the types of fish you would like in your soup, however the venue has their own recommendations: Chilean sea bass or toothfish as it is known here, black cod, and Australian skate. The secret to this Ukha is that each bowl is prepared to order, to which the venue says they add a handful of love.

Mint Pea
Theres not much needed to put together this gastronomic masterpiece: a few fresh green peas, a bit of mint, olive oil, salt and pepper, double cream and bacon. Nor is the preparation that complex: peas go into a minted broth complete with oil and spices and are let to boil to soften and release all of their delicious goodness. Add cream after sieving to create a beautifully silky soup and decorate with mint leaf and a few bacon chips. Bon Appetite!

    Rights We Didnt Know We Had

    Throughout EuroMaidan much has been made of Ukrainians making a stand for their rights. What exactly those rights are were never clearly defined. Ukraine ratified the Universal Declaration of Human Rights in 1952. The first article of the Declaration states all human beings are born free and equal in dignity and rights, they are endowed with reason and conscience, and should act towards one another in a spirit of brotherhood. The ousted and overthrown Ukrainian government showed to the world they dont understand the meaning of these words.

    Pulling Strings
    Located on Hrushevskoho Street the epicentre of EuroMaidan violence, home to battles, blazes and barricades childrens favourite the Academic Puppet Theatre had to shut down in February. Nevertheless, it is getting ready to reopen this March with a renewed repertoire to bring some laughter back to a scene of tragedy. Operating (not manipulating) puppets is a subtle art that can make kids laugh and adults cry. Whats On meets Mykola Petrenko, art director of the Theatre, to learn more about those who pull the strings behind the show.
